Beef Tops Over Rice Recipe
- 1 - 1 1/2 lbs. lean stew meat
- 1 sm. onion, minced
- 1/2 to 1 sm. bell pepper
- 1 can tomato soup
- 1 tomato soup can water
- Salt and pepper to taste
- 1 c. rice
- 2 c. water
- 1 teaspoon salt
- Spray large skillet with Pam.
- Cut meat up in small pcs and cook till lightly browned.
- When meat is nearly done, put in onion and bell peppers and saute/fry lightly.
- Mix tomato soup and water till smooth.
- Pour over meat.
- Salt and pepper.
- Cook on medium to low heat till sauce thickens a little.
- Do not let it get too dry.
- Cook rice till fluffy.
- Serve meat over rice.
