Caramelized Onions in Beer.
- 5 to 6 medium cooking onions
- 2 to 3 tablespoons beer of your choice
- 1 tbsp vegetable oil
- 1 tbsp butter
- 1 tsp salt
- 1/2 tsp pepper
- 1 tbsp brown sugar
- slice onions thin, about 1/4" thick
- in a nonstick pan over med - high heat melt butter & oil, stir in salt, pepper & brown sugar
- add onions, stir often cooking for 6 to 8 minutes
- turn heat down med - low cook 45 minutes more, stirring occasionally til onions are fully cooked, caramel colour and liquid is absorbed
- remove from heat stir in beer a tablespoon at a time, careful not to make too much liquid in onions
