Eggplant Parmesan Italiano
- 1 large eggplant, peeled, cut into 1/4-inch slices
- 1 cup SEVEN SEAS FREE VIVA Italian Fat Free Dressing
- 2 tomatoes, thinly sliced
- 1 cup POLLY-O Lite Reduced Fat Mozzarella Cheese
- 1 cup DI GIORNO Marinara Sauce
- Toss eggplant slices with dressing.
- Arrange in single layer on cookie sheet.
- Broil 8 minutes on each side or until lightly browned on both sides.
- Place eggplant slices in 9x5-inch baking dish.
- Top with tomato slices; cover with cheese and marinara sauce.
- Bake at 350F for 30 minutes or until thoroughly heated.
