Vegan Oaty Pancakes or Waffles (Healthy)
- 34 cup whole wheat flour (I used whole spelt flour)
- 14 cup flour
- 18 teaspoon salt
- 2 teaspoons baking powder
- 12 teaspoon cinnamon
- 18 teaspoon ground nutmeg
- 1 tablespoon sugar
- 14 cup muesli
- 14 cup oats
- 1 13 cups vanilla soymilk (or other non-dairy milk)
- 12 teaspoon vanilla extract
- In a big bowl combine flours, salt, baking powder, cinnamon, nutmeg, sugar, oats and muesli.
- In a second bowl combine vanilla soy milk and extract.
- Add this to the dry ingredients and stir to combine.
- If youre planning on making pancakes, you might want to add a tad more milk to make the dough more liquid.
- Allow dough to rest for about 10 minutes to give the baking powder time to start working (this will make for lighter pancakes/waffles).
- Preheat and oil waffle iron or frying pan/griddle and once they are hot, bake out waffles or pancakes.
- For a pancakes use about 1/4 cup of batter and flip it once bubbles rise to the top of the dough.
- Cook until golden.
- Enjoy.
