Loaded Baked Potato Soup

  1. Slice potatoes and pour 1/2 cup milk over them in a microwaveable container.
  2. Microwave covered on high for 11 minutes.
  3. Stir potatoes, cover and microwave for 10 minutes.
  4. Coarsely mash the potatoes.
  5. While potatoes are cooking , beat together cream cheese and remaining milk until smooth.
  6. Add cream cheese and butter to potatoes and microwave on high for 4 minutes or until hot.
  7. Stir in any optional add -ins and salt and pepper.
  8. Top with onion and cheese.
