Green Chile Stew

  1. Place beef in large pot.
  2. Add just enough water to cover.
  3. Bring to a boil.
  4. Cook, stirring, until browned and juices have evaporated, 1-2 hours.
  5. In large saucepan, melt lard over medium heat.
  6. Add onion and cook stirring, until soft, 8-10 minutes.
  7. Add chiles and tomatoes with juice and boil gently.
  8. Add tomato mixture to meat.
  9. Stir in garlic, salt and pepper.
  10. Reduce heat and simmer 1-2 hours or until thickened.
