Sweet & Sour Meatloaf

  1. Preheat oven to 350 degrees.
  2. In a bowl, combine the ground beef, eggs, bread crumbs, salt & pepper, onion flakes , and 1/3 of the can of tomato sauce (sometimes I go ahead and put half in, but it makes the meatloaf REALLY moist, and some people dont like that).
  3. If youre really opposed to onion flakes, you can definitely use as much real onion as you prefer!
  4. Form into meatloaf and place into a loaf pan.
  5. Leave room around the sides for the sauce (well make that later).
  6. Place in oven for 40 minutes.
  7. When the meatloaf has been in the oven around 25-30 minutes, I make the sauce.
  8. In a saucepan, combine the remaining tomato sauce, mustard, brown sugar, sugar, and apple cider vinegar.
  9. Mix well.
  10. I heat it through until its just about to boil.
  11. Mix it well.
  12. When the meatloaf has baked for 40 minutes, pull it out.
  13. Pour the sauce over & around the meatloaf.
  14. (I really like the sizzle sound it makes when it hits the pan!)
  15. Place back into the oven for 20 minutes or until cooked through.
  16. Slice & serve!
  17. (Once, when I was feeling really unhealthy, I placed a slice between pieces of buttered french bread, grilled it, and dipped it in the sauce.
  18. Delicious!)
