Sweet & Sour Meatloaf
- 1 pound Ground Beef
- 2 whole Eggs
- 3/4 cups Bread Crumbs
- 1 teaspoon Salt
- 1/4 teaspoons Black Pepper
- 1 teaspoon Minced Dried Onion
- 1 can Tomato Sauce, 15 Oz
- 2 teaspoons Mustard
- 1/2 cups White Sugar
- 2 Tablespoons Brown Sugar
- 2 Tablespoons Apple Cider Vinegar
- Preheat oven to 350 degrees.
- In a bowl, combine the ground beef, eggs, bread crumbs, salt & pepper, onion flakes , and 1/3 of the can of tomato sauce (sometimes I go ahead and put half in, but it makes the meatloaf REALLY moist, and some people dont like that).
- If youre really opposed to onion flakes, you can definitely use as much real onion as you prefer!
- Form into meatloaf and place into a loaf pan.
- Leave room around the sides for the sauce (well make that later).
- Place in oven for 40 minutes.
- When the meatloaf has been in the oven around 25-30 minutes, I make the sauce.
- In a saucepan, combine the remaining tomato sauce, mustard, brown sugar, sugar, and apple cider vinegar.
- Mix well.
- I heat it through until its just about to boil.
- Mix it well.
- When the meatloaf has baked for 40 minutes, pull it out.
- Pour the sauce over & around the meatloaf.
- (I really like the sizzle sound it makes when it hits the pan!)
- Place back into the oven for 20 minutes or until cooked through.
- Slice & serve!
- (Once, when I was feeling really unhealthy, I placed a slice between pieces of buttered french bread, grilled it, and dipped it in the sauce.
- Delicious!)
