Melt in Your Mouth No-bake Truffles
- 70 grams A) Chocolate
- 35 grams A) Fresh Cream
- 6 grams A) Mizuame (potato syrup)
- 5 grams A) Unsalted Butter
- 1/2 tsp each Rum, Brandy
- 1 enough to cover the top Cocoa powder
- Put all of A's ingredient in a heatable container
- Microwave for 1 minute (700W) to warm and melt the ingredients.
- Be careful not to overheat.
- Mix until smooth, and then add rum and brandy.
- (Try not to mix in too much air)
- Line a square box with parchment paper, and pour in Step 3.
- Refrigerate for at least half a day.
- Sprinkle the top with cacao powder, and take it out of the mold with the parchment paper.
- Also sprinkle the other side with cocoa powder.
- Cut the chocolate with a knife or string.
- If using string, use both hands and cut in a sawing motion.
- It might help if you prop it up.
- I turned the mold upside down, and used that.
- Also coat the cut sides with cocoa too.
- All done!

- You can also wait for the chocolate to cool a little, pipe it, and then refrigerate as normal.
- For truffles, use 10 g less cream.
- Once the chocolate is firm, shape into a ball, and coat with cacao powder.
- To make it easier to pour, it's okay to add 10-15g more of cream.
