Basic Muffin Recipe
- 3 1/2 c. flour
- 1 c.sugar
- 5 teaspoon baking pwdr
- 1 1/2 teaspoon salt
- 2 beaten Large eggs
- 1 1/2 c. lowfat milk
- 1/2 c. shortening
- Stir together flour, sugar, baking pwdr, and salt; make a well in center.
- Combine Large eggs, lowfat milk, and shortening, and add in all at once to dry ingredients, stirring just till moistened.
- Fill greased or possibly paper-lined muffin tins two-thirds full.
- Bake at 375 degrees for 25-30 min.
- Makes 9-12 Texas muffins or possibly 18-24 muffins.
- VARIATIONS:
- Blueberry: Two c. blueberries and one tsp.
- cinnamon.
- Oatmeal Blueberry: Two c. blueberries, one tsp.
- cinnamon, two c. oatmeal, and another quarter-c. of lowfat milk.
- Cranberry: One 16 oz can whole cranberry sauce, one tsp.
- cinnamon, and one-half tsp.
- allspice.
- Banana Nut: Two or possibly three mashed bananas, one-half c. minced nuts, and one tsp.
- cinnamon.
- Apple Cinnamon: One c. finely minced apple, and one tsp.
- cinnamon.
- Pineapple: One 16 oz can pineapple chunks, liquid removed, and one tsp.
- nutmeg.
- Coconut Chip: One c. coconut and one tsp.
- cinnamon.
- Top with chocolate chips before baking.
- Cherry: One and one-half c. coarsely, minced cherries.
- One-half tsp.
- grnd cloves, and one tsp.
- cinnamon.
- Peach: One 16 oz can diced peaches, liquid removed and one tsp.
- nutmeg.
- Raspberry or possibly Strawberry: Add in one and one-half c. sliced frzn strawberries or possibly raspberries and one tsp.
- cinnamon.
