Basic Muffin Recipe

  1. Stir together flour, sugar, baking pwdr, and salt; make a well in center.
  2. Combine Large eggs, lowfat milk, and shortening, and add in all at once to dry ingredients, stirring just till moistened.
  3. Fill greased or possibly paper-lined muffin tins two-thirds full.
  4. Bake at 375 degrees for 25-30 min.
  5. Makes 9-12 Texas muffins or possibly 18-24 muffins.
  6. VARIATIONS:
  7. Blueberry: Two c. blueberries and one tsp.
  8. cinnamon.
  9. Oatmeal Blueberry: Two c. blueberries, one tsp.
  10. cinnamon, two c. oatmeal, and another quarter-c. of lowfat milk.
  11. Cranberry: One 16 oz can whole cranberry sauce, one tsp.
  12. cinnamon, and one-half tsp.
  13. allspice.
  14. Banana Nut: Two or possibly three mashed bananas, one-half c. minced nuts, and one tsp.
  15. cinnamon.
  16. Apple Cinnamon: One c. finely minced apple, and one tsp.
  17. cinnamon.
  18. Pineapple: One 16 oz can pineapple chunks, liquid removed, and one tsp.
  19. nutmeg.
  20. Coconut Chip: One c. coconut and one tsp.
  21. cinnamon.
  22. Top with chocolate chips before baking.
  23. Cherry: One and one-half c. coarsely, minced cherries.
  24. One-half tsp.
  25. grnd cloves, and one tsp.
  26. cinnamon.
  27. Peach: One 16 oz can diced peaches, liquid removed and one tsp.
  28. nutmeg.
  29. Raspberry or possibly Strawberry: Add in one and one-half c. sliced frzn strawberries or possibly raspberries and one tsp.
  30. cinnamon.
