The Hartness House Inn's Hazelnut Salmon
- 24 ounces salmon fillets
- 1 14 cups hazelnuts, finely chopped
- 3 -4 tablespoons butter
- 12 cup water
- 1 tablespoon shallot, chopped
- 12 cup Frangelico or 12 cup hazelnut-flavored liqueur
- 2 cups heavy cream
- 14 teaspoon salt
- 18 teaspoon white pepper
- Preheat oven to 350F.
- Coat salmon fillets with hazelnuts, pressing in lightly.
- Melt butter in saute pan and brown each piece of salmon about 30 seconds on each side or until golden.
- Transfer to a 13 x 9" baking pan; add water.
- Bake 20 to 25 minutes or until salmon is firm to the touch.
- While the salmon is baking, combine shallots and liqueur in a saucepan.
- Cook until reduced by half; add cream and cook for an additional 15 minutes or until mixture is reduced by half, stirring constantly.
- Continue to cook until mixture begins to thicken; stir in salt and pepper.
- To serve, ladle 1/4 cup of sauce onto each serving plate; place salmon fillets on sauce.
- Garnish as desired and serve.
