Southwest Chicken Red Bell Peppers
- 2 Tablespoons Olive Oil, Divided
- Salt And Pepper
- 1 pound Boneless Skinless Chicken Breast
- 1 Tablespoon Old Bay Seasoning
- 4 whole Red Bell Peppers
- 1 whole Green Bell Pepper, Finely Chopped
- 1 whole White Onion, Chopped
- 1 can (16 Oz. Size) Corn, Drained
- 1 can (16 Oz. Size) Black Beans, Drained
- 1 pound Pepper Jack Cheese
- Preheat oven to 350 degrees F.
- Heat a pan on stovetop to medium high and add 1 tablespoon olive oil.
- Add chicken to pan, season chicken with salt, pepper, and Old Bay seasoning.
- Cook chicken on each side for about 5 minutes.
- When chicken is cooked through and there is no pink showing, cut into small bite size pieces.
- Wash and split open your red bell peppers.
- Remove stems and seeds.
- In a skillet on the stovetop, heat remaining 1 tablespoon olive oil over medium heat to cook up chopped onions and green bell pepper for 10 minutes.
- Meanwhile, take cooked chicken and place inside red bell peppers in a casserole dish.
- Drain your corn and black beans.
- Add a little corn to each pepper and a little of the black beans.
- Once onions and green bell pepper are soft, add to each red bell pepper.
- Shred cheese and top each pepper with it.
- Cook peppers in oven at 350 degrees F for 15-20 minutes until cheese is melted.
- Enjoy!
