Southwest Chicken Red Bell Peppers

  1. Preheat oven to 350 degrees F.
  2. Heat a pan on stovetop to medium high and add 1 tablespoon olive oil.
  3. Add chicken to pan, season chicken with salt, pepper, and Old Bay seasoning.
  4. Cook chicken on each side for about 5 minutes.
  5. When chicken is cooked through and there is no pink showing, cut into small bite size pieces.
  6. Wash and split open your red bell peppers.
  7. Remove stems and seeds.
  8. In a skillet on the stovetop, heat remaining 1 tablespoon olive oil over medium heat to cook up chopped onions and green bell pepper for 10 minutes.
  9. Meanwhile, take cooked chicken and place inside red bell peppers in a casserole dish.
  10. Drain your corn and black beans.
  11. Add a little corn to each pepper and a little of the black beans.
  12. Once onions and green bell pepper are soft, add to each red bell pepper.
  13. Shred cheese and top each pepper with it.
  14. Cook peppers in oven at 350 degrees F for 15-20 minutes until cheese is melted.
  15. Enjoy!
