Zapped Snapper
- 4 skinless red snapper fillets
- 1/4 tsp. Salt and freshly ground pepper
- 2 tbsp. minced scallions
- 2 tsp. finely minced, peeled ginger
- 2 tbsp. soy sauce
- 1 tsp. sesame oil
- 2 tbsp. vegetable oil
- With your fingertips, check snapper fillets for small bones; remove with your fingertips or tweezers and discard.
- Place fillets on microwave-safe plate and season with salt and freshly ground black pepper.
- Tent plate loosely with plastic wrap.
- Microwave on high 3 minutes; turn plate and cook 3 minutes more, or until fish is cooked through and can be easily pierced with fork.
- Divide fillets among serving plates.
- Sprinkle scallions and ginger evenly over fillets.
- Drizzle soy sauce and sesame oil evenly over top.
- In small skillet, heat 2 tablespoons vegetable oil until hot but not smoking; pour hot oil evenly over fillets and serve at once.
