Spice-Rubbed Steak with Chimmichurri
- 1/2 teaspoons Chili Powder
- 1/2 teaspoons Garlic Powder
- 1/2 teaspoons Onion Powder
- 1/4 teaspoons Cumin
- 1/4 teaspoons Ground Coriander
- 1/4 teaspoons Pepper
- 1/4 teaspoons Salt
- 2 whole (1.2 Pound Size) Steaks (about 1/2 Inch Thick)
- 1 Tablespoon Chives
- 2 Tablespoons Cilantro
- 2 Tablespoons Parsley
- 3 cloves Garlic, Roughly Chopped
- 1/4 whole Shallot (roughly Chopped)
- 2 Tablespoons Red Wine Vinegar
- 1 Tablespoon Olive Oil
- 1.
- Preheat a grill pan or grill to medium high.
- Preheat oven to 400 F. In a small bowl, combine all the spices for the steak.
- 2.
- Rub spices evenly on both sides of each steak.
- Once grill pan is hot (smoking slightly), place both steaks on for 3 minutes per side (6 minutes total).

- Once steaks are seared, place them on a rimmed baking sheet and put it in the oven for 3 minutes (for medium rare steak).
- If you want a more medium to medium well, keep in the oven for 5 minutes total.
- Remove from oven.
- Let them rest for 5 minutes before serving.

- Meanwhile make the chimmichurri.
- Add all ingredients to a food processor and pulse until evenly combined.
- 5.
- Serve chimmichurri over the steak.
