Vegetarian Reuben/Rachel Sandwich

  1. Spread the outside of both slices of bread with softened butter.
  2. Place the first slice butter down on a griddle or skillet.
  3. Top bread with Swiss cheese and coleslaw and then drizzle with dressing.
  4. Place the remaining slice on top of the sandwich, butter side up.
  5. Cook over medium heat until crispy and browned, then carefully flip over to cook the other side.
  6. Serve with potato chips and a pickle!
