Vegetarian Reuben/Rachel Sandwich
- 2 slices Rye Bread (Please See My Recipe Box For My Gluten Free Version)
- 1 Tablespoon Butter, Softened
- 1 slice Swiss Cheese
- 13 cups Prepared Creamy Coleslaw (Please See My Recipe Box For My Version)
- 1 Tablespoon Thousand Island Dressing
- Spread the outside of both slices of bread with softened butter.
- Place the first slice butter down on a griddle or skillet.
- Top bread with Swiss cheese and coleslaw and then drizzle with dressing.
- Place the remaining slice on top of the sandwich, butter side up.
- Cook over medium heat until crispy and browned, then carefully flip over to cook the other side.
- Serve with potato chips and a pickle!
