Low-Fat Oatmeal Muffins
- 1 cup flour, all-purpose
- 1/4 cup bran flakes cereal (natural unprocessed bran)
- 1/4 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1 tablespoon baking powder
- 1 cup oatmeal (any kind)
- 1 cup applesauce unsweetened
- 3/4 cups milk nonfat
- 1/2 cup raisins, seedless or any dried fruit, cut in small pieces
- 1 each eggs OR 2 egg whites, or 1/4 c egg substitute
- Heat oven to 400 degrees and spray a muffin tin with cooking spray.
- In a bowl, mix first six ingredients and dump out on a paper plate.
- In the same bowl, mix the remaining ingredients and let sit for 5 minutes.
- Stir in previously mixed dry ingredients just until completely mixed.
- Fill muffin cups almost full.
- Bake for 20 to 22 minutes or until a toothpick inserted in a muffin comes out clean.
- Remove muffins from pan and cool on a wire rack.
