Clk Taco Soup
- 1 lb lean ground beef
- 1 (16 ounce) canlow sodium diced tomatoes
- 1 (10 ounce) can Ro-Tel tomatoes
- 1 (10 ounce) can low-sodium tomato sauce
- 4 cups beef broth
- 1 (16 ounce) can corn, drained
- 1 (16 ounce) can kidney beans, drained and rinsed
- 1 small onion, chopped
- 1 teaspoon minced garlic
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Brown ground beef with onion and garlic.
- Drain, if necessary.
- Add all other ingredients and simmer over medium heat for 15 minutes.
- Top with cheese and sour cream if desired.
