Arkansas Hot Browns

  1. Heat oven to 400 degrees.
  2. In a heavy 4-qt saucepan, melt butter over medium heat.
  3. Mix in flour until smooth.
  4. Slowly add milk, stirring constantly until thickened.
  5. Add hot sauce and parmesean cheese; remove from heat.
  6. Place 1/2 cup of sauce in a small bowl; set remaining sauce aside.
  7. Combine egg yolks with 1/2 cup of sauce, mixing well.
  8. Stir egg mixture back into reserved sauce and return to heat, stirring constantly.
  9. Add Colby& American cheeses; stir until melted.
  10. Remove from heat.
  11. Place bread slices on individual heat-resistant plates.
  12. Cover bread with slices of chicken or turkey and ham.
  13. Cover each serving with some of the sauce and top with a tomato slice and two pieces of the bacon.
  14. Sprinkle with paprika.
  15. Bake 10 to 15 minutes or until bubbly.
