Golden Fruit Conserve

  1. Peel, pit and coarsely chop nectarines and peaches separately.
  2. Mash both fruits.
  3. You should have 2 1/4 cups nectarine mixture and 2 cups of peach mixture.
  4. In a large saucepan combine the mashed fruits, raisins and lemon juice.
  5. Place sugar into a bowl and set aside.
  6. Add the pectin and butter to the fruit and bring to a full rolling boil over high heat, stirring constantly.
  7. Add sugar quickly and bring back to a full rolling boil.
  8. Boil hard for 1 minute, stirring constantly.
  9. Remove from heat.
  10. Skim off any foam.
  11. Stir in almonds.
  12. Ladle into prepared jars leaving a 1/4" headspace.
  13. Process in a boiling water bath for 10 minutes.
  14. Adjust time according to altitude.
