Black Bean Sloppy Joes
- 1 can (14 1/2 Oz. Size) Petite Diced Tomatoes, Drained
- 2 cans (14 1/2 Oz. Size) Black Beans, Drained
- 1 Tablespoon Dijon Mustard
- 1/4 cups Brown Sugar
- 2 Tablespoons Worcestershire Sauce
- 1 Tablespoon Ground Cumin
- 1 jar (15 Oz. Size) Prepared Salsa
- 1 teaspoon Kosher Salt
- 6 Good Quality Buns
- 6 slices Monterey Jack Cheese
- Combine drained beans, tomatoes, mustard, sugar, Worcestershire sauce, cumin, and salsa in a medium-sized skillet.
- Heat over medium-high heat and let simmer until it starts to thicken and is heated through.
- Season with salt; you may need more or less depending on the seasoning level of salsa used.
- Spoon onto buns and top with a slice of cheese.
