Honey Mustard Potato Salad
- 3 lbs red potatoes, with skin cooked, cooled and cubed
- 1 cup mayonnaise
- 3 tablespoons honey
- 2 tablespoons yellow mustard
- 1 tablespoon fresh lemon juice
- 2 teaspoons prepared horseradish
- 1 teaspoon paprika
- 12 teaspoon garlic powder
- 12 teaspoon onion powder
- 2 (4 1/4 ounce) canslindsay chopped ripe olives
- 12 cup finely shredded sharp cheddar cheese
- 34 cup finely diced fresh fennel (anise)
- 12 cup finely diced red be pepper
- kosher salt & freshly ground black pepper (optional)
- In a large bowl, combine mayonnaise, honey, mustard, lemon juice, horseradish, paprika, garlic powder, and onion powder.

- Add olives, cheese, fennel and red pepper; mix well.
- Add potatoes; mix well.
- Season to taste with salt and pepper if desired.
- Chill at least one hour before serving.
