Enchilada Bake
- 1 lb groud sausage
- 1 lb ground beef
- 1 cup corn
- 1/4 small onion diced
- 1 packages corn tortillas
- 2 can refried beans
- 4 cup Enchilada sauce
- 16 oz shredded cheddar cheese
- 2 tbsp taco seasoning
- Brown sausage, hamburger, and onion.
- Add corn and taco seasoning.
- Set aside.
- Mix refried beans with 1 cup enchilada sauce.
- Set aside.
- In a 9x11 pan coat bottom with 1/4 cup enchilada sauce.
- Make layer of tortillas in bottom of pan.
- Next add the hamburger mix as a layer.
- Next another layer of tortillas.
- Add a layer of enchilada sauce
- Layer the refried bean mix next.
- Then another layer of tortillas.
- Top with the remaining enchilada sauce and shredded cheese.
- Bake at 400 for 20 min or until cheese is bubbly.
- Serve with salsa and sour cream.
