Crunchy Tuna Salad

  1. Peel and grate carrot; chop celery and onion.
  2. Mix carrots, celery, onions, basil, pepper, cottage cheese and tuna (drained) in medium bowl.
  3. Line dinner plate with lettuce (1/8 pound = 1 cup lettuce).
  4. Spoon tuna mixture over lettuce.
  5. Cut tomato into wedges and slice cucumber.
  6. Surround tuna mixture with tomatoes and cucumbers.
  7. Serve salad with an English muffin spread with margarine, and a cookie for dessert.
