Crunchy Tuna Salad
- 1/2 carrot
- 1/2 celery stalk
- 1/8 medium yellow onion King Sooper's 1 lb For $0.99 thru 02/09
- 1 tsp. dried basil leaves
- 1/8 tsp. ground black pepper
- 1/4 cup BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
- 2 oz. canned white tuna in water
- 1/8 lb. romaine lettuce leaf
- 1/2 medium tomato Safeway 1 lb For $1.29 thru 02/09
- 1/4 cucumber
- 1 100% whole wheat English muffin
- 1 Tbsp. trans fat free canola-based soft margarine
- 1 SNACKWELL'S Sugar Free Lemon Creme Sandwich Cookie
- Peel and grate carrot; chop celery and onion.
- Mix carrots, celery, onions, basil, pepper, cottage cheese and tuna (drained) in medium bowl.
- Line dinner plate with lettuce (1/8 pound = 1 cup lettuce).
- Spoon tuna mixture over lettuce.
- Cut tomato into wedges and slice cucumber.
- Surround tuna mixture with tomatoes and cucumbers.
- Serve salad with an English muffin spread with margarine, and a cookie for dessert.
