Shrimp & Scallops With Cheese Sauce Recipe
- 3 tbsp. butter
- 3 tbsp. cornstarch
- 3 c. lowfat milk
- 12 ounce. Swiss Gruyere cheese, diced
- 1/4 teaspoon garlic pwdr
- Salt to taste
- 1/4 teaspoon dry mustard
- 2 teaspoon tomato paste
- 3 teaspoon lemon juice
- 1 pound scallops
- 1/2 pound sliced mushrooms
- 1 pound shrimp, cooked & cleaned
- 2 tbsp. diced green pepper
- Heat butter in top of double boiler, add in cornstarch and stir to create a smooth paste.
- Slowly stir in lowfat milk, cook, stirring constantly, till it thickens and comes to a boil.
- Add in cheese and stir till melted.
- Add in next 6 ingredients, remove from heat.
- Poach scallops about 10 min in simmering water with 1 tsp.
- lemon juice and some salt.
- Remove scallops, add in 1/2 c. of this to cheese sauce, stir.
- Saute/fry mushrooms in butter and add in to sauce.
- Add in scallops and shrimp and heat.
- Garnish with green pepper and serve with rice.
- Serves 6 to 8.
