Mediterranean Pasta Salad

  1. Cook pasta to al dente, rinse in cold water to cool once done
  2. Saute broccoli, onion, and garlic until mostly, but not fully, cooked.
  3. (So it can be soft but still a little crunchy)
  4. Halve the olives, and slice the sun dried tomatoes.
  5. Chop up the mint so that it is nearly minced
  6. Mix together steps 1-4
  7. Whisk the olive oil and lemon juice together and drizzle over the pasta salad
  8. Add salt, pepper, and more lemon juice as needed
  9. Sprinkle feta on top
  10. Enjoy!
