Plantation Ginger Cakes With Spiced Sugar Topping
- 1 23 cups all-purpose flour
- 14 cup sugar
- 2 tablespoons baking powder
- 12 teaspoon cinnamon
- 12 teaspoon ginger
- 12 teaspoon nutmeg
- 12 teaspoon salt
- 12 cup raisins
- 2 eggs, lightly beaten
- 14 cup oil
- 13 cup milk
- 12 teaspoon vanilla
- 12 cup dark molasses
- 2 tablespoons sugar
- 18 teaspoon cinnamon
- 18 teaspoon ginger
- 18 teaspoon nutmeg
- Place paper or foil liners in twelve medium size muffin cups.
- Combine flour, sugar, baking powder, cinnamon, ginger, nutmeg and salt in medium bowl.
- Stir well.
- Stir in raisins.
- Combine eggs and oil in small bowl.
- Mix well.
- Stir in milk and vanilla.
- Add molasses.
- Mix well.
- Stir into flour mixture.
- Mix until moist.
- Spoon into cups.
- Blend topping ingredients.
- Sprinkle over batter.
- Bake 375 16-20 minutes or until a toothpick inserted in muffins comes out clean.
- Cool.
