Pap's Chess Pie
- Single-crust unbaked 9-inch pie pastry
- 3/4 cup Land O Lakes Butter, melted
- 4 Land O Lakes Eggs, beaten
- 1 1/2 cups sugar
- 2 teaspoons cornmeal
- 1/4 teaspoon salt
- 4 teaspoons Land O Lakes Heavy Whipping Cream
- 1 teaspoon vanilla
- Land O Lakes Heavy Whipping Cream, whipped, if desired
- Pecan halves, if desired
- Heat oven to 350F.
- Place pastry into 9-inch pie pan.
- Crimp or flute edge of pastry; set aside.
- Combine all filling ingredients in bowl.
- Stir until well mixed.
- Pour filling into prepared pastry.
- Bake 30-35 minutes or until golden brown and knife inserted in center comes out clean.
- Cool completely.
- Top each serving with whipped cream, if desired.
- Garnish with pecan halves, if desired.
