German Orange Cake Recipe
- 3/4 c. orange juice
- 2 tsp orange peel
- 1/2 c. sugar
- 3 Large eggs, separated
- 1 1/4 c. oat flour, sifted
- 1 1/4 c. brown rice flour, sifted
- 4 teaspoon of baking pwdr
- 1/4 tsp. salt
- 1 teaspoon lemon or possibly almond extract
- Cream butter well to incorporate air, gradually adding sugar.
- Beat in egg yolks one at a time, beating well after each addition.
- Sift together flour, baking pwdr, salt.
- Add in dry ingredients to creamed butter mix alternately with 1/2 c. water.
- Beat well.
- Add in extract.
- In a very clean bowl (one trick is to rub the bowl with vinegar), beat egg whites till stiff but not dry.
- Fold gently into batter.
- Turn mix into 2 greased layer cake pans.
- Bake in preheated 350
