Thick and Chewy Granola Bars

  1. Preheat oven to 350 degrees F. Line an 8 x 8 pan with parchment paper and lightly coat with coconut oil or butter.
  2. Combine dry ingredients in a large bowl, including dried fruit and nuts.
  3. In a smaller bowl, whisk peanut butter, melted coconut oil, maple syrup, and water until well combined.
  4. Add wet ingredients to dry ingredients, and combine until coated well.
  5. Press mixture into prepared pan.
  6. Bake for 3236 minutes, or until edges are golden brown.
  7. Remove and cool completely before cutting into bars.
  8. I recommend placing these in the refrigerator or freezer before cutting to cut down on cooling time and to avoid crumbling.
