Grandma's Banana Bread, Vegan

  1. Preheat oven to 350 degrees.
  2. Mix flax seed and water together in a small bowl.
  3. Beat the sugar and sucanat with the oil and applesauce on medium speed of a mixer.
  4. Add the flax seed and water mixture.
  5. Beat a little longer.
  6. Add bananas.
  7. Beat until the bananas are well incorporated in the wet ingredients.
  8. Stop the mixer.
  9. Add flour, baking soda, salt and vanilla.
  10. Mix just until ingredients are all wet.
  11. You don't want to develop gluten and make the bread tough.
  12. Fold in nuts if using.
  13. Pour batter into a greased loaf pan.
  14. Bake at 350 degrees for 45-50 minutes until toothpick inserted comes out clean.
