Texas Chili
- 4 lbs lean beef or 4 lbs chili-style ground beef
- 2 tablespoons oil
- 1 large onion, chopped
- 2 teaspoons minced garlic cloves (1/2 teaspoon powdered)
- 1 teaspoon salt
- 1 teaspoon Mexican oregano
- 1 teaspoon ground cumin
- 1 (28 ounce) can diced tomatoes
- 1 (15 ounce) can tomato paste
- 2 cups water
- 6 tablespoons chili powder
- Heat oil in a large dutch oven or pot over medium heat.
- Add your meat.
- Brown meat and drain grease.
- Add the onions, garlic and cook until onions are translucent.
- Add the remaining ingredients and stir well.
- Bring to a boil then reduce heat so that the chili simmers.
- Simmer uncovered for 1 hour stirring occasionally.
