Salmon Patties - My Way

  1. Drain salmon juice into a large bowl and pick the round bones out of the salmon.
  2. (You can leave in the small bones and skin.
  3. ).
  4. Add salmon, onion, crushed crackers, eggs, salt and pepper to the salmon juice.
  5. Mix thoroughly with hands.
  6. Put oil and enough butter when melted to cover the bottom of a large skillet.
  7. Heat on medium high until bubbly.
  8. Form salmon mixture into hand-sized patties a little over 1/4 inch thick.
  9. Fry in butter and oil until golden brown, adding more butter to the pan when bare spots appear.
  10. Drain on paper towels and enjoy!
  11. Yummy!
