Cracklin Cornbread
- 2 cup white lily self - rising buttermilk white cornmeal
- 1 large egg
- 1 cup cracklin's
- 1 cup water
- 1 1/2 cup milk (you can use 1 1/4 cup but I like more)
- 1/4 cup vegetable oil
- 1/4 cup sugar
- Preheat oven to 425 .
- Soak cracklin's for 15 to 20 minutes.
- (You don't have to but I like them better soft.)
- Put oil in pan and place in oven.
- Beat egg and stir in cornmeal, milk, &sugar.
- Remove extra water from cracklin's and fold them in.
- Remove pan and pour oil in bowl mix a little then pour mix in pan and place in oven.
- Cook for 20 to 25 minutes.
- Remove butter top of cornbread then put in oven for 5 or 10 minutes.
- I turn my oven off and leave it in for a while.
- If you need more cornmeal do so but don't forget to a a little more milk as well.
