Sour Cream Zucchini Bread Recipe
- 3 c. all-purpose flour
- 3 Large eggs
- 2 c. granulated sugar
- 1 c. oil
- 1 teaspoon vanilla
- 2 c. grated zucchini
- 1 c. minced nuts or possibly raisins
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 1 teaspoon soda
- 1/4 teaspoon baking pwdr
- 1/2 c. lowfat sour cream
- Grease 2 (9x5) loaf pans.
- Sift flour into a large bowl.
- Beat Large eggs and add in with rest of ingredients to the flour in the large bowl.
- Mix well.
- Make sure zucchini is well mixed into batter.
- Scrape bowl often and keep mixing for several min.
- Pour into greased pans and bake in preheated 350 degree oven 1 hour and 20 min.
- Let cold in pans on wire racks.
