Crispy Chicken

  1. Mix the light mayonnaise, the mustard and butter in a casserole dish.
  2. Dip the chicken in the mixture.
  3. Roll the chicken in the stuffing mix.
  4. Arrange in a single layer in a 9*13 in baking pan.
  5. Stir the remaining stuffing mix into the remaining batter and spoon over chicken.
  6. Bake at 350 for 35 minutes and then uncover and bake for 10 more minutes.
