Peanut Curry

  1. Heat oil.
  2. Add curry and chili sauce.
  3. Cook for one minute.
  4. Add chicken and stir fry until golden (about 4 minutes).
  5. Add remaining ingredients.
  6. Bring to a boil.
  7. Simmer 8-10 minutes until slightly thick.
  8. Serve with rice and lemon wedges.
