Broiled Figs With Raspberry Sorbet And Pistachios Recipe
- 16 x Black Mission Figs, stems trimmed, cut into quarters almost completely through so the fruit opens like a flower
- 4 Tbsp. turbinado sugar (or possibly granulated sugar)
- 1/2 pt raspberry sorbet
- 1/2 pt vanilla ice cream Powdered sugar
- 1/2 pt fresh raspberries
- 2 Tbsp. minced pistachios
- 4 sprg fresh mint for garnish
- Turn on the broiler.
- On a nonstick baking sheet, arrange 4 figs in a flower cluster at 12, 3, 6, and 9 o'clock with a small space in the center.
- Do the same with the remaining figs to create four clusters.
- Sprinkle with sugar.
- Place under the broiler and cook till the sugar is caramelized, about 3 to 4 min.
- Remove from the broiler.
- Carefully transfer the fig clusters to the center of each serving plate.
- To serve: Place oval scoops of the raspberry sorbet and vanilla ice cream in the center of the fig cluster.
- Dust with the powdered sugar.
- Sprinkle the figs and plate with raspberries and pistachios.
- Garnish each with a sprig of mint.
