Texas Fudge
- 4 cups Shredded Cheddar Cheese
- 8 ounces, weight Jar Of Pimentos, Drained
- 15 ounces, weight Can Of Chopped Or Sliced Black Olives
- 15 ounces, weight Can Of Diced Green Chilies
- 4 cups Shredded Monterey Jack Cheese
- 8 Eggs, Beaten
- Salt And Pepper, to taste
- Butter, For Greasing Your Pan
- Preheat oven to 350 F. Grease a 9x13 pan with butter, then spread cheddar cheese on the bottom of dish.
- Evenly spread pimentos, black olives and green chilies over cheese.
- Spread Monterey jack cheese over the top.
- Pour beaten eggs over the whole dish and shake and tilt the dish making sure the eggs cover every layer.
- Sprinkle with salt and pepper to taste.
- Place in preheated oven for 30 minutes or until golden brown.
- Then remove it from the oven and let it cool for about 10 minutes to make sure its set.
- Cut into squares and serve.
- On its own its a great appetizer or makes a great breakfast with some bacon and biscuits on the side.
