Texas Fudge

  1. Preheat oven to 350 F. Grease a 9x13 pan with butter, then spread cheddar cheese on the bottom of dish.
  2. Evenly spread pimentos, black olives and green chilies over cheese.
  3. Spread Monterey jack cheese over the top.
  4. Pour beaten eggs over the whole dish and shake and tilt the dish making sure the eggs cover every layer.
  5. Sprinkle with salt and pepper to taste.
  6. Place in preheated oven for 30 minutes or until golden brown.
  7. Then remove it from the oven and let it cool for about 10 minutes to make sure its set.
  8. Cut into squares and serve.
  9. On its own its a great appetizer or makes a great breakfast with some bacon and biscuits on the side.
