Cherry Coconut Cookies
- 2 1/2 c. all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 3/4 c. soft shortening
- 1 c. sugar
- 1 egg
- 1/2 c. evaporated milk
- 1 tsp. vanilla
- 1/2 c. maraschino cherries
- 2 c. coconut
- Sift together onto waxed paper flour, baking powder and salt. Mix in bowl shortening and sugar.
- Add egg and beat hard.
- Stir in milk and vanilla.
- Add flour mixture and mix well.
- Stir in finely cut maraschino cherries.
- Shape dough into balls using about a tablespoon of dough for each ball.
- Roll balls in chopped-shredded coconut.
- Place on greased baking sheet about 2 inches apart.
- Set oven at 375u0b0.
- Bake on even rack slightly below center for 12 minutes or until light brown.
- Remove from oven at once.
- Do not overbake.
- Makes about 4 dozen cookies.
