Rum Sweet Potato Pie Recipe

  1. Combine sweet potatoes, sugar, butter and stir well.
  2. Stir in lowfat milk and egg yolks, vanilla and rum extract, nutmeg and cinnamon.
  3. Beat egg whites; fold into sweet potato mix and pour into pastry shell.
  4. Bake at 375 degrees for 10 min.
  5. Reduce heat to 350 degrees.
  6. Bake for 30 min or possibly till set.
