Tuna Canoes (And Tomato Too )
- 2 avocados
- 2 tsp.lemon juice
- 1 (6 ounce) can tuna in water, drained
- 2 eggs, hard boiled and finely chopped
- 2 tablespoons onions, finely chopped
- 2 tablespoons dill relish
- salt
- pepper
- tomatoes, slices for garnish
- Mix tuna with eggs, onion, and relish and season with salt and pepper.
- Cut avocados in half lengthwise and remove seeds.
- Scoop out all but about 1/4 inch of flesh from avocados and chop.
- Mix with 1 teaspoons lemon juice in a small bowl.
- Brush avocado halves with remaining lemon juice.
- Add chopped avocado to tuna mixture and gently mix Place completed tuna mixture into.avocado halves.
- Serve Tomato slices on the side.
