Almond Coated Albacore Recipe
- 1 1/3 lb skinless Pacific albacore loin cuts, 3/4" thick
- 1 c. buttermilk
- 1/2 c. grnd toasted almonds
- 1/2 c. fresh toasted bread crumbs
- 1 tsp grated orange peel
- 1 whl berry cranberry sauce
- Rinse albacore with cool water; pat dry with paper towels.
- Soak albacore in buttermilk for 10 to 15 min.
- Mix together almonds, bread crumbs and orange peel.
- Drain buttermilk from albacore.
- Dredge albacore in coating mix.
- Place on greased baking sheet.
- Bake at 425 degrees for 6 to 8 min.
- Don't overcook!
- Albacore should be pink in center when removed from heat.
- Serve with cranberry sauce.
- This recipe yields 4 servings.
