Almond Coated Albacore Recipe

  1. Rinse albacore with cool water; pat dry with paper towels.
  2. Soak albacore in buttermilk for 10 to 15 min.
  3. Mix together almonds, bread crumbs and orange peel.
  4. Drain buttermilk from albacore.
  5. Dredge albacore in coating mix.
  6. Place on greased baking sheet.
  7. Bake at 425 degrees for 6 to 8 min.
  8. Don't overcook!
  9. Albacore should be pink in center when removed from heat.
  10. Serve with cranberry sauce.
