Spinach and Artichoke Grilled Cheese

  1. In a medium bowl combine the Boursin, spinach, artichokes, and Parmesan cheese.
  2. Stir with a spatula until completely combined.
  3. Taste for seasoning and add salt and pepper.
  4. Spread a thick layer of the spinach mixture on the slices of bread and top with slices of fresh mozzarella.
  5. Grill the sandwich in a skillet until the cheese is melted and the bread is golden on both sides.
