Bean Casserole
- 1 (16 oz.) bag Great Northern beans
- 1 lb. ground chuck or ground turkey
- 1/2 c. green pepper, chopped
- 1 medium onion, chopped
- 1 clove garlic, chopped
- 1/2 c. tomato, chopped
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1 large bag grated Cheddar cheese
- Soak beans overnight or at least 2 hours.
- Rinse and cook until fork-tender.
- Drain.
- Saute or brown ground beef, onions, peppers and garlic; salt and pepper.
- Drain off any excess oil.
- Add tomatoes and tomato sauce.
- In a casserole dish, layer beans, meat mixture and cheese.
- Continue to layer until casserole dish is full.
- Spread topping of cheese on top and bake in 350u0b0 to 375u0b0 oven for 20 minutes or until cheese is melted.
- Let cool and serve warm or cold.
