Greek Style Turkey Burgers
- 2 whole Pita Bread Halves For Soaking In Milk
- 1 cup Milk
- 1- 1/4 pound Ground Turkey
- 1 teaspoon Smoked Paprika
- 1/4 teaspoons Ground Cardamom
- 2 teaspoons Dried Dill Weed
- 1 teaspoon Ground Cumin
- 1 teaspoon Kosher Salt
- Pepper To Taste
- 1 teaspoon Dried Oregano
- 1 whole Egg
- 3/4 cups Sweet Onion, Chopped
- 1/4 cups Flat-leaf Parsley, Chopped
- Olive Oil, For Your Skillet, For Frying
- 1 whole Tomato, Diced
- 1/2 whole Seedless Cucumber, Diced
- 1 whole Sweet Bell Pepper, Stem And Seeds Removed Then Diced
- 1/2 cups Sweet Onion, Diced
- 1/2 teaspoons Dried Dill Weed
- 1/4 cups Flat-leaf Parsley, Chopped
- 1/4 cups Kalamata Olives, Diced
- 1 Tablespoon Lemon Juice
- 1 Tablespoon Olive Oil
- 4 ounces, weight Plain Greek Yogurt
- 6 ounces, weight Feta Cheese, Crumbled
- 2 Tablespoons Olive Oil
- 1 clove Garlic, Peeled And Chopped
- 1/2 teaspoons Dried Dill Weed
- 8 whole Pita Bread Halves
- Olive Oil, For Brushing On The Pitas
- For the burgers:
- Soak 2 pita bread halves in milk until very soft and pliable.
- In a large bowl combine ground turkey with smoked paprika, cardamom, dill, cumin, salt, pepper and oregano.
- Using your hands, wring the extra milk out of the moist pita bread dough and add the dough into the meat.
- Add an egg, finely chopped onion, and flat leaf parsley; stir well but dont overwork the meat.
- Scoop your meat into small rounds using a cookie scoop and flatten into patties.
- Heat a skillet over medium-high heat.
- Add a bit of oil and heat it.
- Cook the patties in the olive oil until they are browned on both sides and cooked through, about 4-5 minutes per side.
- For the salsa:
- In a medium-sized bowl combine tomatoes, cucumber, bell pepper, sweet onion, dill, parsley, kalamata olives, lemon juice and olive oil.
- Stir and set aside.
- For the whipped feta:
- Combine Greek yogurt, feta cheese, garlic, olive oil and dill in a food processor or blender.
- Mix until smooth and creamy.
- Set aside.
- Assembly: Brush pitas with a bit of olive oil and heat in a skillet over medium heat until warm and slightly toasted.
- Stuff each pita with a few turkey patties, a big spoonful of veggie salsa and a dollop of whipped feta cheese.
