Greek Style Turkey Burgers

  1. For the burgers:
  2. Soak 2 pita bread halves in milk until very soft and pliable.
  3. In a large bowl combine ground turkey with smoked paprika, cardamom, dill, cumin, salt, pepper and oregano.
  4. Using your hands, wring the extra milk out of the moist pita bread dough and add the dough into the meat.
  5. Add an egg, finely chopped onion, and flat leaf parsley; stir well but dont overwork the meat.
  6. Scoop your meat into small rounds using a cookie scoop and flatten into patties.
  7. Heat a skillet over medium-high heat.
  8. Add a bit of oil and heat it.
  9. Cook the patties in the olive oil until they are browned on both sides and cooked through, about 4-5 minutes per side.
  10. For the salsa:
  11. In a medium-sized bowl combine tomatoes, cucumber, bell pepper, sweet onion, dill, parsley, kalamata olives, lemon juice and olive oil.
  12. Stir and set aside.
  13. For the whipped feta:
  14. Combine Greek yogurt, feta cheese, garlic, olive oil and dill in a food processor or blender.
  15. Mix until smooth and creamy.
  16. Set aside.
  17. Assembly: Brush pitas with a bit of olive oil and heat in a skillet over medium heat until warm and slightly toasted.
  18. Stuff each pita with a few turkey patties, a big spoonful of veggie salsa and a dollop of whipped feta cheese.
