Trail Mix Cookies
- 34 cup butter or 34 cup margarine, softened
- 12 cup granulated sugar
- 12 cup brown sugar, packed
- 1 teaspoon baking powder
- 12 teaspoon baking soda
- 1 teaspoon ground allspice
- 2 eggs
- 1 cup mashed banana (3 medium)
- 1 teaspoon vanilla
- 1 12 cups all-purpose flour
- 1 12 cups rolled oats
- 1 cup mixed dried fruit
- 34 cup coconut
- 34 cup peanuts, walnuts or 34 cup pecans, chopped
- In a large mixing bowl, beat the butter or margarine with an electric mixer on medium to high speed for 30 seconds.
- Add the granulated sugar, brown sugar, baking power, baking soda, and allspice; beat till combined.
- Beat in the eggs, mashed bananas and vanilla.
- Beat in as much of the flour as you can with the mixer.
- Stir in any remaining flour with a wooden spoon.
- Stir in the oats, dried fruit bits, coconut and nuts.
- Drop dough by rounded teaspoonfuls 2-inches apart onto ungreased baking sheet.
- Bake in a preheated 375F for 10-12 minutes, or till golden brown.
- Remove cookies and cool on wire rack.
