Homemade Onion Soup
- 13 cup olive oil
- 2 tablespoons flour, all-purpose or bread flour
- 8 cups stock vegetable
- 1 x salt to taste
- 1 x cayenne pepper to taste
- 1 loaf french bread
- 2 cups soy cheese, mozzarella
- 8 each onions sliced
- 2 cloves garlic minced
- (Yields 4 to 6 Bowls Easily)
- Saute onions and garlic in oil over low heat until tender and golden yellow.
- Sprinkle flour over onions, cook a few minutes more, browning the flour well.
- Add veggie broth and bring to a boil.
- Reduce heat, cover, and simmer gently for 20 minutes or so.
- Add salt and pepper, to taste.
- Meanwhile, slice French Bread into 3/4 inch slices and soy butter both sides.
- Toast slices on griddle until golden brown.
- Ladle soup into an ovenproof bowl, add toasted bread and cover with soy cheese.
- Place ovenproof bowl on a baking sheet lined with tin foil.
- Bake at 350F (180C) F or 5 minutes under a hot broiler.
- Note: To get a chicken style broth I sprinkle in nutritional yeast flakes or you can purchase veggie chicken style seasoning from health food store without the msg!!
