Chunky Chili Casserole

  1. Mix stuffing mix and hot water in 2-quart microwavable casserole.
  2. Spread evenly in casserole.
  3. Mix meat and onion in large microwavable bowl.
  4. Cover loosely with wax paper.
  5. Microwave on HIGH 4 minutes or until meat is no longer pink.
  6. Drain.
  7. Stir in chili, 1 cup of the cheese, corn and olives.
  8. Spoon over stuffing.
  9. Cover loosely with wax paper.
  10. Microwave 10 minutes, rotating casserole halfway through cooking time.
  11. Let stand 5 minutes.
  12. Sprinkle with remaining 1/2 cup cheese.
  13. Serve with sour cream, if desired.
