Spanish Potatoes
- 1 lb small red potato, quartered
- 1 12 cups diced onions
- 1 cup diced green pepper
- 12 cup water
- 1 tablespoon olive oil
- 1 teaspoon chicken bouillon granule
- 1 cup chopped tomato
- 12 teaspoon dried oregano
- Place potatoes in a saucepan and cover with water.
- Bring to a boil, reduce heat, cover and cook until tender.
- In another pan, combine the onions, green pepper, water, oil and bouillon and bring to a boil.
- Reduce heat, cover and simmer until vegetables are tender.
- Drain potatoes and add onion mixture, tomatoes and oregano.
- Stir gently to coat.
