Red Onion and Apple Soup With Curry
- 1 12 quarts chicken broth
- 1 14 lbs red onions, thinly sliced
- 2 cups coarsely grated peeled tart cooking apples, divided
- 12 cup cubed carrot
- 1 large bay leaf
- 1 teaspoon curry powder
- 1 teaspoon chili powder
- 14 teaspoon dried thyme
- 14 teaspoon ground allspice
- salt and pepper
- mango chutney (to garnish)
- Combine all ingredients except salt, pepper and chutney in slow cooker.
- Cover and cook on high for 4-5 hours.
- Discard bay leaf.
- Season to taste with salt and pepper.
- Serve with chutney to stir into soup.
