Pasta Primavera(Italian)
- 1 (10 oz.) pkg. thin spaghetti
- 3 Tbsp. butter or margarine
- 2 c. broccoli, sliced thin
- 2 (1 1/2 c.) medium fresh carrots, sliced thin
- 3/4 c. chopped onion
- 1 clove garlic, minced
- 1 tsp. basil, crushed
- 1 tsp. salt
- 1/2 tsp. pepper
- 2 c. fresh mushrooms, sliced thin
- 1 (6 oz.) pkg. frozen pea pods
- Parmesan cheese
- Cook the spaghetti according to package directions.
- Drain and keep warm.
- In a large skillet/wok, melt butter.
- Add broccoli, carrots, onion, garlic and basil.
- Saute 6 to 7 minutes. Add mushrooms.
- Cook 2 minutes. Add pea pods and cook 2 minutes longer or until all vegetables are crisp-tender. Serve vegetables over hot pasta. Sprinkle with Parmesan cheese.
- Makes 8 servings. Preparation time:
- 10 to 15 minutes.
